Mother's Day

The best thing about being home is being with Mom.  Today has been a good day. Filled with deliciousness, wine, kitties, and naps. 

I am very lucky in my mother. That we have this time together now.  

I know this time is very difficult for some, those who have lost their moms, those who have lost children, those who want children but are unable to conceive. So extra hugs to you. 

I'm happy and lucky with my fur babies Chai and Mango. I accepted at a very early age (I think I was 12) the diagnosis that it was unlikely I'd be able to have children. After working at a day camp the summer after my senior year of high school I realized that was probably for the best, that I didn't really want them either.  (Not that I dislike kids... I just realize that the combination of generational trauma, genetics, my unique neurodivergence makeup, etc. does not equate to a good time for anyone)

Food and Music seem to be how I express love best. So today I made mom some tasty things:

We had a brunch of:
An heirloom caprese tomato salad. The heirloom tomatoes looked gorgeous at the store. 
This salad is simple. On a small bed of mixed greens layer slices of heirloom tomato (sprinkled with salt and pepper), fresh mozzarella slices, then drizzle with a little pesto and balsamic glaze. 
I also got a wheel of prepared shrimp cocktail (because I know mom loves shrimp)
and made deviled eggs (I mix my filling with mayonnaise, a little stone ground mustard, garlic powder, salt, smoked paprika... then I sprinkle them with some tajin seasoning). 
I also had pomegranate mimosas  (juice + moscotto) 

Then we took naps lol. 


For dinner I made: 
 Manacotti stuffed with a spinach and artichoke ricotta mixture and a marinara with mushrooms, onions, garlic and italian sausage topped with Italian cheeses. Served with one of my favorite zinfandels. 

It wasn't very pretty but it sure was tasty!
