Food and Music seem to be how I express love best. So today I made mom some tasty things:
We had a brunch of: An heirloom caprese tomato salad. The heirloom tomatoes looked gorgeous at the store. This salad is simple. On a small bed of mixed greens layer slices of heirloom tomato (sprinkled with salt and pepper), fresh mozzarella slices, then drizzle with a little pesto and balsamic glaze. I also got a wheel of prepared shrimp cocktail (because I know mom loves shrimp) and made deviled eggs (I mix my filling with mayonnaise, a little stone ground mustard, garlic powder, salt, smoked paprika... then I sprinkle them with some tajin seasoning). I also had pomegranate mimosas (juice + moscotto) Then we took naps lol. For dinner I made: Manacotti stuffed with a spinach and artichoke ricotta mixture and a marinara with mushrooms, onions, garlic and italian sausage topped with Italian cheeses. Served with one of my favorite zinfandels. It wasn't very pretty but it sure was tasty!
